225g/8oz each of black and green olives
4 tbsp extra virgin olive oil
3 small sprigs each of fresh thyme, rosemary and oregano
4 small fresh bay leaves
1 large clove of garlic, sliced thinly
2 lemon slices, quartered
Mix all together and leave to infuse for 4 hours or more!
Great gift store in a jar and give to a freind.
Serve with your cocktail sticks in the centre everyone tuck in!
For a bit of heat try some deseeded fresh chille slices.
