One Whole Chicken
Half can of beer of your choice.

A rub of Salt, Sugar and Herbs/Spice of choice

Get your Chicken Roaster and fill the inner cup with beer and some herbs.
Insert the "Chicken roaster" in to the chicken rear down (yes so it’s inside the chicken, I know it’s not very lady like for the chicken).
Rub herb/spice rub on the chicken's skin (you can also add herbs to the salt before rubbing, I do this in a pestle and mortar).
Pour a little more liquid in the moat around the chicken (enough to cover the base only).
Now place the “Chicken Roaster” in the cool oven and cook 180C or gas mark 3(ish) until the juices run clear from the chicken, and all the flesh is cooked (no pink bits thank you).
Enjoy a crispy skinned, succulent chicken, with less fat and steamed with beer and herbs!

Salt, sugar, ground cumin, ground coriander, add chilli powder for heat.
Salt, sugar, lemon zest, chopped sage, chopped rosemary.
Chinese five 5 Spice, salt, pepper, sugar and chilli flakes for heat.
